- 1 lb. of shrimp, cleaned and diced into small pieces
- 1/2 C corn
- 1/2 C diced red onion
- 2 tsp lime juice
- 2 tsp cilantro
- salt and pepper to taste
Chop up the shrimp into small pieces and place on a piece of tinfoil or a grill pan. Add the corn and the diced red onion. Sprinkle on the lime juice, cilantro, salt & pepper.2. Turn on grill and let heat up on medium heat. Place the shrimp mixture on the grill and allow to cook 7-8 minutes or until shrimp is pink. Place a few soft-shell tortillas on the grill and let cook for 1 minute.3. Serve immediately with salsa, avocado and sour cream.4. Enjoy!
