Grilled Shrimp Tacos

Ingredients
  

  • 1 lb. of shrimp, cleaned and diced into small pieces
  • 1/2 C corn
  • 1/2 C diced red onion
  • 2 tsp lime juice
  • 2 tsp cilantro
  • salt and pepper to taste

Method
 

  1. Chop up the shrimp into small pieces and place on a piece of tinfoil or a grill pan. Add the corn and the diced red onion. Sprinkle on the lime juice, cilantro, salt & pepper.
    2. Turn on grill and let heat up on medium heat. Place the shrimp mixture on the grill and allow to cook 7-8 minutes or until shrimp is pink. Place a few soft-shell tortillas on the grill and let cook for 1 minute.
    3. Serve immediately with salsa, avocado and sour cream.
    4. Enjoy!
