Grilled Reuben Roll Ups

These easy grilled Reuben wraps are perfect for lunch, dinner, or even a party appetizer. They’re quick to make, incredibly satisfying, and have that irresistible crispy exterior with a gooey, flavorful center.

Ingredients
  

  • 4 flour tortillas
  • 10 slices Swiss cheese
  • 3/4 cup sauerkraut well drained
  • 1/2 cup thousand island dressing
  • 3/4 pound thinly sliced corned beef
  • 2 tablespoons butter
Homemade Thousand Island Dressing
  • 1 cup mayonnaise
  • ¼ cup sweet pickle relish
  • ¼ cup ketchup
  • 1 tablespoon white vinegar
  • 2 tablespoons finely diced onion
  • ½ teaspoon finely minced garlic
  • Salt & pepper to taste

Method
 

  1. Arrange tortillas on a work surface. Lay 2 1/2 pieces of cheese across the bottom third of each tortilla and top evenly with sauerkraut. Drizzle each with 2 tablespoons of dressing over the kraut and top evenly with corned beef. Starting at the bottom, roll each tortilla tightly.
  2. Working in batches if necessary, heat butter in a large skillet or grill pan over medium heat. Add roll ups, seam side down, and cook until golden and toasted.
  3. Flip and repeat until toasted on all sides and cheese has melted.
  4. Cut each wrap into 3 pieces and serve with additional dressing if desired.
Homemade Thousand Island Dressing Instructions
  1. Mix all ingredients together in a bowl or jar. Refrigerate for at least one hour to let the flavors blend. Refrigerate dressing in an airtight container or jar for up to 1 week.
