- Arrange tortillas on a work surface. Lay 2 1/2 pieces of cheese across the bottom third of each tortilla and top evenly with sauerkraut. Drizzle each with 2 tablespoons of dressing over the kraut and top evenly with corned beef. Starting at the bottom, roll each tortilla tightly.
- Working in batches if necessary, heat butter in a large skillet or grill pan over medium heat. Add roll ups, seam side down, and cook until golden and toasted.
- Flip and repeat until toasted on all sides and cheese has melted.
- Cut each wrap into 3 pieces and serve with additional dressing if desired.
Homemade Thousand Island Dressing Instructions
- Mix all ingredients together in a bowl or jar. Refrigerate for at least one hour to let the flavors blend. Refrigerate dressing in an airtight container or jar for up to 1 week.
