Place the block of cheese on a cutting board. Cut the block of cheese into 1/2 inch rectangle pieces.
Set up a breading station with three shallow dishes: flour in one, beaten eggs in another, and breadcrumbs, parsley, and garlic salt in the third.
Coat each cheese stick first in flour, then egg, then breadcrumb mixture, pressing the breadcrumbs on firmly. For extra crispy coating, repeat the egg and breadcrumb step for a double coating.
Freeze coated sticks on a baking sheet for at least 30 minutes. This crucial step prevents the cheese from melting out during frying.
Heat oil in a deep pan to 350°F, using enough oil to submerge the sticks halfway. Test temperature with a breadcrumb – it should sizzle immediately.
Fry in batches for 4-5 minutes, turning once, until golden brown all over. Don’t overcrowd the pan or the oil temperature will drop. You want to keep a close eye on them!
Drain on paper towels and let cool for 2-3 minutes before serving with warm marinara sauce for dipping.
