Pour the heavy cream into the bowl of your mixer.
Start mixing on medium speed. After a few minutes, you’ll see it turn into whipped cream.
Keep going. Soon, the whipped cream will deflate and separate into butter solids and buttermilk. Once the butter clumps together, turn off the mixer and pour off the buttermilk (save it for baking!).
Rinse the butter under cold ice water while pressing it gently with a spatula to remove any remaining buttermilk.
