Ingredients

  • 6 hard boiled eggs
  • 3 tablespoons mayo
  • 2 teaspoon mustard
  • 3 tablespoons chopped dill
  • paprika, for garnishing
  • chopped dill pickle, garnishing or in the mix

Method

  1. For this recipe I like to only use the yolk but you can also blend the boiled eggs as whole. In a bowl add the yolk, mayonnaise, mustard, and chopped pickles and mix well with a hand blender. If you are using the whole boiled egg, combine all ingredients in a food processor. Taste and adjust to your liking.
  2. Pour into serving dish and sprinkle with paprika. serve with fresh veggies and cracked. Enjoy!

Notes

For the leftover egg whites,  I use that as a snack or turn it into an egg salad for sandwiches!
