Crockpot French Onion Chuck Roast

Ingredients
  

  • 1-3 pound beef chuck roast
  • 1 package of French onion soup mix
  • 5 potatoes diced ( you can use any kind that you like)
  • 2 carrots diced
  • 1 1/2 cup of water
  • Salt & pepper

Method
 

  1. Start by searing your roast 4 minutes on each side and seasoning with salt and pepper. Searing helps to lock in the juices.
  2. Take your diced potatoes and carrots and place at the bottom of your crockpot. Sprinkle with a 1/4 of the French onion mix. Place the chuck roast on top, sprinkle remaining soup mix and then add in water.
  3. Cook on low heat 8-10 hours. Once cooked, pull apart your roast with a fork. If you'd like to make a gravy, remove the beef and vegetable and mix in 2T corn starch with 2T water.
