Carrot & Cucumber Salad

If you are looking for the ultimate fresh and flavorful side dish, this Carrot & Cucumber Salad is about to become your new obsession.

Ingredients
  

  • 3 medium carrots
  • 1 English cucumber
  • 1 tsp grated garlic
  • ½ tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • Garnish with - cilantro green onions and/ or sesame seeds
  • Optional - chili onion crunch for some spice

Method
 

  1. Prep the carrots and cucumbers. Use a vegetable peeler to shave carrots into thin ribbons as well as the cucumbers.
  2. In a large bowl, add the carrot and cucumbers. Add in the remaining ingredients and toss to coat.
  3. Add heat if you want. Drizzle with chili onion crunch for that spicy, it is SO good!
  4. Enjoy immediately or let it chill for 10 minutes to deepen the flavors.
  5. Serve and top with sesame seeds and green onions.
