Bean Salad

If you’re looking for a fresh, flavorful, and protein-packed side dish, this easy bean salad recipe is about to become your new favorite.

Ingredients
  

  • 1 can of garbanzo beans drained and rinsed
  • 1 can of kidney beans drained and rinsed
  • 1 small red onion diced
  • 1/4 C Pepperoncini's diced
  • 1 red pepper diced
  • 1/2 English cucumber diced
  • Juice of 1/2 lemon
  • 1 Tbsp of avocado oil
  • 1 Tbsp Red Wine Vinegar
  • Feta Cheese
  • Salt and Pepper

Method
 

  1. Start by draining your beans into a colander and rinsing them. Add those to a bowl. Next dice up all of the veggies and add that into the bowl.
  2. And in the lemon juice, avocado oil, and red wine vinegar, top with salt and pepper and feta cheese and tossed gently.
  3. Allow to sit in the fridge for an hour to fully marinate and serve. This will be your new obsession!
