White Chicken Chili
White Chicken Chili has always been a favorite of mine and such an easy week night meal for busy people. This is also a great crockpot meal to make and leave till dinner time. See my notes section for the crockpot version!

Ingredients
- 3 cups shredded cooked chicken
- 3 15 oz cans of northern beans, 2 out of 3 cans drained
- 1 small can green chilies
- 3 cups chicken broth
- 1/2 onion, diced
- 1 cup corn, drained or frozen
- 2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 cloves garlic, minced
- 2 T flour
- 1/2 block of cream cheese
- 2 T butter
Instructions
- In a large pot, add the butter and diced onion. saute for 5 minutes or so then add in the garlic. Saute another 2 minutes then sprinkle in the flour. Slowly add in the chicken broth, a cup at a time and let simmer until slighty thick.
- Next add in the chicken, corn, beans, chilies and seasoning and let simmer on low for 15 minutes. Add in the cream cheese, let melt and serve.
- Top with more cheese, avocados, cilantro or your favorite additions!
Notes
Crockpot Version
In a crockpot, place all ingredients except for the flour, butter and cream cheese. cook on low 4-6 hours. Once cooked mix 2 tsp cornstarch with 2 tsp water and mix in. It will slightly thicken and then add in the cream cheese.
You could also add in raw chicken thighs instead of cooked chicken and shred at the end as well!
