
Whether you’re cooking for one, meal prepping for the week, or just trying to get more protein into your diet, this single-serve high-protein quiche is a game changer. It’s everything you love about a classic quiche—creamy, savory, comforting—but with a macro-friendly twist and zero fuss.
Ingredients:
- 1 flour tortilla
- 2 eggs
- 1/4 cup cottage cheese
- 1/4 cup breakfast sausage (optional or add veggies)
- Crumbled feta
- Salt & pepper
Instructions:
- Preheat your oven to 350°. In a small oven safe bowl add your flower tortilla, crack your two eggs at your cottage cheese and your breakfast sausage. Add the salt, pepper feta, I usually do a tablespoon or so of the feta and then mix well.
- Place in the oven and bake for 30 minutes or until completely done. Take out and let cool and enjoy!
