Ham & Broccoli Casserole
We make a big ham a few time a year and I’m always looking for a way to use it all up. Let me introduce ham and broccoli casserole! Filled with cheese, rice and so much goodness!

Ingredients
- 2 1/2 cups cooked ham, diced
- 1 cup long grain white rice (dry)
- 2 1/2 chicken broth
- 1 1/2 cups broccoli florets
- salt & pepper to taste
- 2 T butter
- 1/2 onion, chopped
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 2 cups shredded cheddar cheese
Instructions
- 1. Preheat the oven to 350 degrees. Melt the 2 Tablespoons butter in a large saucepan over medium heat. Add the diced onions and cook for 5 minutes, until softened.
2. Add the chicken broth and rice and let simmer. Once simmering, stir, reduce heat and put a lid on it and let cook until rice is cooked (7-8 minutes). Add the broccoli, cover, cook for 8 more minutes.
3. Add the diced ham, condensed soup, sour cream, milk, and onE cup of the cheddar cheese. Stir until well-combined. Spread into a lightly greased 9 x 13 casserole dish. Top with remaining cheddar cheese. Cover and bake for 25 minutes.
4. Serve immediately.
