Crockpot French Onion Chuck Roast

During the school week my mom always had some sort of crockpot meal going. Usually it was a roast or chicken and it smelled so good walking into the house.

I love a good chuck roast and the secret to keeping it tender and juicy is searing it first before adding to the crockpot. Searing it will help lock in the juices. Adding a packet of the French onion soup mix just makes it complete!

Let's get started!

Ingredients

1-3 pound beef chuck roast
1 package of French onion soup mix
5 potatoes, diced ( you can use any kind that you like)
2 carrots, diced
1 1/2cup of water
Salt & pepper

Instructions

Start by searing your roast 4 minutes on each side and seasoning with salt and pepper. Searing helps to lock in the juices.

Take your diced potatoes and carrots and place at the bottom of your crockpot. Sprinkle with a 1/4 of the French onion mix. Place the chuck roast on top, sprinkle remaining soup mix and then add in water.

Cook on low heat 8-10 hours. Once cooked, pull apart your roast with a fork. If you'd like to make a gravy, remove the the beef and vegetable and mix in 2T corn starch with 2T water.

Serve beef and vege
