Y’all with the winter months come to end (soon) and spring and summer upon us, I know my winter bod is not going to be ready for summer unless I make some changes. I’ve been cooking with a lot more veggies and taking our favorite dishes and giving them a healthy tune up!

I love making beef and broccoli and having a side of fried rice along with it. I re-created our favorite dish and nixed the rice for some cauliflower. I love how versatile cauliflower is and the many variations of meals you can make with it!

Ingredients Method

Ingredients
  

Cauliflower Fried Rice
  • 2 Tablespoons of sesame oil
  • 2 eggs
  • 1 small head cauliflower
  • 1/2 cup frozen mixed vegetables
  • 2 cloves garlic minced
  • salt and pepper
  • 3 Tablespoons low sodium soy sauce
Beef and Broccoli
  • 1 pound flank steak sliced into 1/4 inch thick chunks
  • 3 cups small broccoli florets
  • 1/4 cup sliced mushrooms
  • 1/2 cup beef stock
  • 5 cloves garlic minced
  • 2 tablespoons corn starch
  • 1 tablespoon oil
  • For the sauce:
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 teaspoons corn starch

Method
 

Cauliflower Fried Rice
  1. Chop cauliflower head into big chunks and pulse in a blender. Another alternative if you don't have a blender is grating the cauliflower on a box grater. Measure out 4 cups grated cauliflower.
  2. Heat the sesame oil in a large nonstick skillet over high heat. Add cauliflower and frozen mixed vegetables then stir fry until cauliflower is just beginning to turn tender, 3-4 minutes. Add garlic, season with salt and pepper, and then continue to stir fry until garlic is fragrant, 30 seconds or so.
  3. Push mixture to the side of the pan to give space for the egg, crack both eggs and scramble. Let stir fry another minute and then add soy sauce. Serve hot!
Beef and Broccoli
  1. Toss beef in a large bowl with corn starch.
  2. Heat oil in a pan over medium heat for a few minutes. Add beef and cook until it browns, a few minutes. Transfer to a plate and set aside.
  3. Add broccoli, mushrooms and garlic to the pan, and stir. Add beef broth. Let simmer until the broccoli is tender, about 10 minutes, stirring occasionally.
  4. While vegetables are cooking, combine all of the sauce ingredients in a bowl and mix well
  5. Add the reserved beef and sauce to the pan, and stir. Let simmer for 5 minutes or until the sauce thickens a bit.
  6. Serve beef and broccoli over the cauliflower fried rice.
