One of my favorite quick & easy meals to whip up is a BLT sandwich! Sometimes a normal BLT sandwhich can be a bit borning, so there are a few special touches I like to put on it. Introducing my BLT recipe – The Sassy Way!
Ingredients:
1 pack bacon, cooked
1-2 large tomatoes
1 bag lettuce
1/4 cup mayo
2 Tablespoons red wine vinegar
1 teaspoon Italian seasonings
2 Tablespoons olive oil
salt & pepper
Instructions:
Get your bacon cookin’! And while it’s cooking, slice your tomato and then cut the slices in half. Add to a bowl and add the olive oil, red wine vinegar, Italian seasonings and salt & pepper. Give the tomatoes a toss and let marinate until bacon is done.
Drain the bacon grease and set aside. Place your Mayo in a bowl and spoon in 2-3 spoonfuls of the juices from the tomatoes. Mix well.
Assemble your BLT on toast or soft shell tortillas with Mayo, lettuce, bacon and tomatoes. That’s it!
