I never wanted an airfryer in my house... NEVER! Now? I can’t live without the darn thing! I make all kinds of delicious food in it now and my favorite of them all? CHICKEN PARMESAN! It turns out amazing every time in the airfryer!

2 large boneless chicken breasts
Freshly ground black pepper
1/3 c. all-purpose flour
2 large eggs
1 c. bread crumbs (I like Italian)
1/4 c. freshly grated Parmesan
1 tsp. Italian seasonings
1/2 tsp. garlic powder
1 c. marinara sauce
1 c. shredded mozzarella
Freshly chopped parsley, for garnish
Butterfly chicken by cutting in half widthwise to create thin pieces of chicken. Season on both sides with salt and pepper.
Place flour in a shallow bowl and eggs in a second bowl and beat. In a third bowl, combine bread crumbs, Parmesan, Italian seasonings and garlic powder.
Working with one piece of a chicken at a time, coat in flour, then dip in eggs, and finally press into panko mixture making sure both sides are coated well.
Spray the bottom of the airfryer basket with olive oil, place chicken in basket of air fryer and spray the tops with olive oil. Airfry at 350° for 7 minutes. Flip and cook for another 3. Top chicken with sauce and mozzarella and cook at 375° for 3 minutes more or until cheese is melty and golden.
