My friend Karen and her mom Malita are AMAZING cooks and bakers. They are my go to for trying out breads and teaching me tricks. Once a week Karen and I will get tougher for dinner and this weeks menu was Karen’s famous Chicken Tequila Pasta. Y’all…. IT IS SO GOOD!
Let’s get started!
Ingredients
1 package fettuccine pasta
1/3 C cilantro
2 T minced garlic
2T minced jalapeño
3T butter
1/2 C chicken stock
3T tequila
2T freshlime juice
3T soy sauce
4 chicken breasts, cubed
1/4 Red onion, sliced
1 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 green bell pepper, sliced
1 1/2 C heavy whipping cream
Directions
Pour soy sauce over chicken and let set for 5 minutes
In a medium sauce pan, sauté cilantro, garlic, jalapeño in 2T butter for 4-5 minutes. Add in the chicken stock, tequila and lime juice. Bring to a boil and cook until reduced, add in cream, let cook and get slightly thick. Set aside.
Sauté the chicken in a large skillet with onions for 10 minutes. Add in peppers and remaining butter and let cook through.
Get your fettuccine cooked!
Place your fettuccine on a plate, top with chicken mixture, pour sauce on and top with shredded Parmesan cheese.
