I’m no baker.. have you seen my stories on bread making 😂 NOT GOOD! But every once in a while I’ll have success with a Bundt cake or a cake bread. This lemon poppy seed bread is a walk in the park! Some vanilla cake mix and a few other ingredients and we’re good to go!

Ingredients

• 1 box vanilla cake mix or lemon cake mix
• 2 T lemon zest
• 1/4 c lemon juice
• 2-3 T poppy seeds

Directions

1. Pre-hear oven 350. Make the cake mix as directed, if living in a higher altitude add 1/4 C flour to cake mix. Add in the lemon juice, zest and poppy seeds and mix well.
2. Take a greased bread pan or cake pan and pour batter in.
3. Bake as directed on cake box, typically 35-40 minutes or until cake is baked in the middle.
