These sheet pan reubens are SO good and easy to make for a large crowd! Just in time for St. Patty's Day too! BE sure to add this cheesy dinner to your weekly menu rotation for the week! Let me know if you will try it!
Let’s get started!
1. Preheat oven to 350. Place 6 of the flour tortillas around the edges of the lightly sprayed sheet pan. Make sure the tortillas overlap and are hanging halfway over the edge of the pan, leaving a gap in the center.
2. Then, place 1 tortilla over the bottom center gap of the sheet pan.
3. Add 6 slices of cheese to the bottom, layer on the corned beef, spread out the sauerkraut, add the thousand island all over and top with 6 slices of the cheese.
4. Place a tortilla in the middle and start to carefully fold the tortillas towards the middle of the pan.
5. When all sides are folded, place the 2nd sheet pan on top of the folded tortillas.
6. Bake for 20 minutes.
