Ok, this may come off as fighting words with what I'm about to say but, have you ever had a palisade peach? They come from Palisade, CO and y'all... they beat a Georgia peach by a landslide. I have never tasted anything like it and try to use it in every recipe I can find.
One of my favorite go to breakfasts when I'm on the run is overnight oats. You can make a weeks worth and just keep them in the fridge, pop them in the microwave the next morning or eat them cold. The other great part about overnight oats is you cannot mess it up. Truly, if you don't consider yourself the greatest cook, this recipe is for you! You can get creative and make so many different variations.
We're going to focus back on the peaches though and use them in this recipe for the overnight oats. I recommend using fresh peaches or canned in your oats. I also LOVE Trader Joe's rolled
