I did a fridge and freezer clean out to prep for a big Costco trip I have coming up and remembered I haven’t made this soup in a hot minute! It is literally everything but the kitchen sink and I’m here for it!
An easy soup packed with veggies, meat and tortellini and... SO GOOD! Literally take any of your favorite veggies to make it your own!

1 lb ground beef
1/2 cup chopped onion
1 1/2 cup mixed frozen veggies
1/2 cup chopped cabbage (optional)
1/2 cup chopped zucchini (optional)
1/2 cup chopped mushrooms (optional)
1 14oz can kidney beans, drained
1 14 oz can diced tomatoes
5 cups beef broth
2 T tomato paste
2 cups cheese tortellini
2 cloves garlic, minced
salt & pepper to taste
1 tsp garlic salt
1 tsp basil
1 tsp 21 seasoning salute (optional)
Parmesan cheese for topping
In a large pot, drizzle some olive oil and add your garlic, onion and ground beef. Cook until beef is cooked through. Add in the rest of your veggies and let cook for 5 minutes.
Add in your kidney beans, tomatoes, paste and broth and give a good stir. Add in the seasonings and let simmer for 10 minutes. Add in the tortellini.
Let the tortellini cook until soft, serve immediately! Top with Parmesan cheese and serve with crusty bread.
