If you follow me on Instagram you have seen my friend Karen pop up in my stories quite a bit and let me tell ya, you don’t want to miss the stories with both of us in the kitchen. Karen can cook! I never pass up a time when Karen wants to bring over a meal or have us over.
I am sharing her Shrimp Avocado Pasta with y’all today and you will be sure to be eating till it hurts!
Let’s get started!
This pasta will be a new favorite of yours! Sauteed shrimp paired with tomatoes, avocado and basil pesto for a delish summer time meal.
1. Fill a pot with water and let boil. While you wait for the water to boil dice up your avocado, tomatoes and chop up your parsley.
2. Once the water is boiling, add in pasta and let cook until al dente. In a pan place your shrimp in the pan with the butter, salt, pepper, and garlic and let saute for 5 minutes. in a bowl mix together the avocado, tomatoes, pesto, parsley and olive oil. Set aside.
3. Drain pasta, place in a large dish, top with shrimp, top with avocado mixture. Serve Immediately!
