Leftover Turkey & Rice Soup

Looking for recipes to use up all that delicious leftover turkey?! I love making turkey and rice soup! Perfect for these cold Wyoming days, especially when Austin’s worked on the ranch all morning!

Let’s get started!

Ingredients

  • 2 cups shredded leftover turkey
  • 1/2 yellow onion, diced
  • 2 cups frozen mixed veggies
  • 7 cups of chicken broth or stock
  • 1 1/2 cup cooked rice
  • Salt & pepper to taste
  • 1 teaspoon garlic salt
  • 1 Bay leaf
    1 teaspoon garlic salt
    1/2 cup of butter

Directions

  1. Add your butter, mixed veggies and onion to a pot. Sauté until butter is melted and veggies are soft. Next add in your spices, broth, turkey and cooked rice.
  2. Let simmer on low for 20 minutes.
  3. Bake some biscuits to go along side of the soup!
  4. Serve soup immediately or let cool and freeze and freezer safe containers for future lunches or dinners.
