Apple & Bacon Salad

Who says salads can’t be pretty?! I’m all for a good salad packed full of prettiness with a side of homemade dressing. We had guests over for dinner the other night and fall was in the air y’all (truthfully, living in WY, fall is in the air beginning of August for us)

I wanted to make a good hardy salad to go with our elk steaks, so I decided on a salad with some fall goodness. I also made a creamy balsamic with mustard… y’all… it turned out GOOD!

Let’s get started!

INGREDIENTS

Salad:

  • 4-6 cups mixed salad leaves
  • 1/2 cup dried cranberries
  • 1/2 cup Trader Joe’s ancient grains seed mix
  • 1/3 cup goat cheese
  • 1/2 sweet red apple sliced thin
  • 4 slices bacon cooked and sliced or chopped

Dressing:

  • 4 tablespoons olive oil
  • 5 tablespoons balsamic vinegar
  • 3-4 teaspoons Dijon mustard
  • Salt & pepper
