If you saw my earlier post I shared the one pot pasta dish I served this past week… well i’m on a roll with these easy clean up dishes and love making pan fajitas. I think the flavors mix so well together as they bake in the oven or in the summer time popping the pan on the grill!
We make fajitas or tacos literally once a week…. we’re obsessed with Mexican food, we actually had a taco bar at our wedding that’s how much we love it!
For this fajita night I took pork shoulder steaks. Ever try them? Oh man, i’m hooked! The meat was so tender and cooked perfect in the oven. I plan to head back to the store this week to stock up on some and vacuum seal them!
Ingredients:
1 pound pork shoulder steaks
1 pepper, sliced
1/2 yellow onion, sliced
1/2 C chopped mushrooms
1 T chili powder
1 T garlic salt
1 t smoked paprika
1 t onion powder
1/2 t cayenne pepper (optional)
Directions
Pre-heat your oven to 350 and place your pork steaks on a large pan. Run the dry seasonings evenly on both sides of the steak.
Place your sliced peppers, onions and mushrooms around the steaks on the same pan and place in the oven. Cook for 20 min.
These steaks do not have to be well done and can have a slight pink to them if you like your pork a little rare. Place the steaks on a cutting board and cut against the grain. The vegetables should be roasted and ready to use as a topping.
Now the fun part, make your burritos! We love topping the steak and veggies with sour cream, cheese, salsa and avocado. I also make a pot of rice that I add chili powder, garlic salt, cilantro and lime juice to once cooked.
